Coffee in the high country
The mountain towns along I-70 and north into Grand County roast their own coffee, and Breckenridge has several roasters on the Roast Local directory. Color Coffee Roasters opened its flagship cafe in Eagle in 2016, and its name is short for Colorado. Steamboat Springs has its own page; this one covers the rest of the high country. The high country's coffee story
Color Coffee Roasters grew out of years of backyard tinkering. It began as a home roasting project, and its flagship cafe opened in Eagle in 2016.
The name does two jobs. Roasters describe coffee flavor in colors, such as red fruit or purple fruit, and Color is also short for Colorado.
Eagle sits at about 6,700 feet at the lower end of the Vail Valley, about 125 miles west of Denver, and Color's cafe in Eagle Ranch has become a community hub for the town. It bakes its own pastries and serves breakfast, lunch, craft beer and natural wine next to the roastery.
A roaster in a small mountain town stays open when the town buys its coffee. A bag bought from a roaster in Eagle or Breckenridge pays wages in that town. Our page on why local roasters matter goes further.

Color Coffee Roasters, 717 Sylvan Lake Road in Eagle Ranch, with the roastery on site. Color buys through importers with a focus on single farms, cooperatives and villages, and puts smallholder farmers first. It also roasts wholesale for coffee shops, markets, restaurants, hotels and offices.
