Color Coffee Roasters is one of the beloved local roasters we follow in Colorado: an independent roaster based in Eagle, founded in 2016. Here is what their own pages and public sources say about them, in our words.
Their story
Color Coffee Roasters began as a home roasting project and grew out of years of tinkering in the backyard. Its flagship cafe opened in Eagle in 2016. Founder Charlie Gundlach's home roasting led him to a barista job at Portola Coffee Lab in 2013, where he learned espresso and single cup brewing and finished a roasting apprenticeship. Portola went on to win Roast magazine's 2015 Roaster of the Year award. After returning to Colorado and working in hospitality at Boxcar Coffee Roasters in Boulder, he launched Color.
The name plays on how coffee flavor is described in colors, such as red fruit or purple fruit, and is also short for Colorado. Color buys through importers, focusing on single farms, cooperatives and villages so each producer's flavor shows, and it prioritizes smallholder farmers for whom prices above the commodity market matter. The roastery ran more than 24,000 batches on a Probat 12 kilo roaster before moving to an IMF 15 kilo roaster, chosen for clarity, consistency and lower gas use.
Color roasts wholesale for coffee shops, markets, restaurants, hotels, offices and coworking spaces, and says its mission is to restore clarity to coffee.

Roast levels run light and dark. House blends include Primary (seasonal blend), Eclipse (dark roast blend made for home espresso) and Harmony (espresso blend). Single origins on the list when we checked: Ethiopia washed Yirgacheffe, Colombia Andres Martinez honey processed co-ferment (Artist Reserve), Colombia Carmen Montoya multi-stage washed Chiroso (Artist Reserve) and Honduras Mario Mejia Natural Pacas. Harmony is the espresso blend; Eclipse is made for home espresso machines. Offerings change with the seasons, so this is what their own pages listed on 2026-09-27.

The cafe sits in the heart of Eagle Ranch on Sylvan Lake Road and is a community hub for Eagle. Eagle sits at about 6,700 feet at the lower end of the Vail Valley, about 125 miles west of Denver, and the cafe points visitors to its backcountry skiing, trail running and Nordic terrain. The cafe bakes its own pastries and serves breakfast, lunch, craft beer and natural wine alongside its coffee.
