Holiday lineups change fast. A seasonal blend listed in September may be gone by the time you shop, and a new one may take its place, so treat these as names to look for.

Seasonal blends

A seasonal blend is a roaster's own idea of what the time of year should taste like, which makes it the most personal bag on the shelf.

• Corvus in Denver lists Orchard Thief as a seasonal blend next to its year-round Dead Reckoning and Halcyon Days.
• OZO in Boulder sells Cozy Cabin as a seasonal. For a gift, the name does half the work.
• Color Coffee Roasters in Eagle keeps a seasonal blend called Primary, so the bag in December is not the bag from summer.

For after dinner: decaf and half caff

Holiday dinners run late, and a decaf lets everyone at the table have a cup. Wikipedia's article on decaffeination notes that United States rules require at least 97 percent of the caffeine to be removed, and its main coffee article adds that the caffeine comes out while the beans are still green, before roasting.

Wikipedia's coffee roasting article describes dark roasts as full bodied and bittersweet, with the roast flavor clear. That suits a slow holiday breakfast and a splash of cream. Colorado has plenty:

• Camp 4 in Crested Butte sells Art of Darkness, a French roast of Sumatra and Costa Rica.
• Peregrine's flagship dark roast is Dark Skies, and Dark Heart in Loveland sells one called Darkest Days.
• OZO added Ursa Major, its dark roast, after ten years of roasting.
• Queen City's Bottle Rocket, Pablo's Two Stroke Smoke and Huckleberry's Bom Senso are the Denver dark roasts to look for.

Bindle in Fort Collins roasts and ships Monday to Wednesday, so plan around those days.
