Bindle Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Fort Collins. Here is what their own pages and public sources say about them, in our words.
Their story
Bindle Coffee was created by Andrew and Jenn Webb, who also run Bread Fellow in Fort Collins. Andrew grew up in Fort Collins and Jenn moved there from Nebraska. Both have worked in hospitality for more than 20 years. When they met in 2010, Andrew was a barista and singer songwriter and Jenn baked by day and acted in musical theater at night. They married on November 11, 2011, kept building their coffee and pastry skills, and set out to open a shop that paired excellent coffee with baked goods under one roof.
Their first shop, at Jessup Farm, handled the roasting, the baking and the cafe in a single space. About ten years later the business had grown to three shops. Bindle's signature dark roast, Jim's Dark Room, honors Grandpa Jim McCafferty, a chemistry professor at Chadron State College who roasted coffee at home in a machine he built from a shop vac, chicken wire and a popcorn popper. The blend replaced Bunker Blend, which began during the lockdown. Bindle lists the importer, producer, process and elevation for each coffee, working with importers such as Crop to Cup, Collaborative Origins and Onyx Coffee Importers.
The company says its aim is to build restorative spaces that nourish and inspire, and that relationships run from the growers to the people behind the counter.
What they roast
Roast levels run dark (Jim's Dark Room) and espresso. House blends include Sidekick Espresso Blend (Guatemala, Nicaragua, Ethiopia Limu) and Jim's Dark Room (signature dark roast). Single origins on the list when we checked: Guatemala La Hermosa and Uganda The Coffee Yards (sold out on the check date). Sidekick Espresso, a three-origin blend built to be sweet and balanced in milk drinks. Offerings change with the seasons, so this is what their own pages listed on 2026-09-27.
Where to drink it
The Harmony Road roastery and bakehouse serves coffee and pastries on weekday and Saturday mornings; the Jessup Farm cafe is open weekdays and Saturdays until 5pm.

Bindle says it serves Northern Colorado with freshly roasted coffee and pastries and brunch made from scratch. Its merchandise is designed by its own baristas and printed locally by Pine Printshop.
