Novo Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Denver, founded in 2002. Here is what their own pages and public sources say about them, in our words.
Their story
Novo Coffee was started in Denver in 2002 by Jake, Joe and Herb Brodsky, with the goal of linking good coffee growers with the people who drink their coffee. The company sums up its approach as Get Closer, a relationship-based model that runs from producers and importers through to the customer. Novo buys from many of the same farms year after year, which it says helps farmers earn better prices and improve quality over time. It sources through brokers, importers and direct relationships with producers, and puts weight on transparency along the chain.
After more than two decades, Novo runs three cafes plus a roastery and supply shop, and sells to wholesale customers. The roastery on Larimer Street roasts daily to order for its own cafes and for businesses around Denver and across the country, and is marked by a large Get Closer mural. Novo teaches public classes on seed to cup, home brewing, espresso basics, milk steaming and latte art, and advanced espresso, and runs weekly Friday roastery tours that end with a tasting of four coffees.
It also offers private group tours and on-site barista training for its wholesale accounts.

House blends include Denargo, ThunderCloud, Four Leftys and Cold Brew Blend. Single origins on the list when we checked: Colombia Buesaco, Colombia Belen Chiroso, Elite and Elite Honey, Ethiopia Danche and Indonesia Java Frinsa. Two espresso coffees are listed in the shop.
