Peregrine Coffee Roasters is one of the beloved local roasters we follow in Colorado: an independent roaster based in Westcliffe, founded in 2016. Here is what their own pages and public sources say about them, in our words.
Their story
Peregrine began in 2016 in Kathmandu, Nepal, where founder Stephen Holmes roasted coffee in 1 kilo batches in a small roastery and his family became part of the neighborhood. The company is now based in the Sangre de Cristo Mountains of southern Colorado. Its Westcliffe cafe, a converted chicken house of about 600 square feet, held the whole operation from 2018. The roastery sits at 7,887 feet. Peregrine started on a 5 pound roaster and moved up to a San Franciscan 10 pound roaster, and it cups every batch to keep roasts consistent.
The founder has worked in coffee for about 15 years and set out to be a specialty roaster by reputation, not just by label. Peregrine may taste around twenty coffees from a region before choosing one, and it builds direct relationships with farmers through its own visits or trusted partners. It has bought from the same Burundi farmer for eight years. The name comes from the peregrine falcon, chosen for its precision and endurance over long distances.
Peregrine has since opened a second cafe in the CORE District of Richardson, Texas, in the former home of Communion Coffee, while roasting still happens in Colorado.
What they roast
Roast levels run light, medium and dark. House blends include Timberline (flagship medium roast and house espresso) and Dark Skies (flagship dark roast). Single origins on the list when we checked: Ethiopia Guji Kercha Natural, Ethiopia Yirgacheffe Chelbessa Washed, Mexico Nuevo Paraiso (certified organic), El Salvador Las Marias SL28 Natural, Peru Joel Marin Mires Natural Gesha, Peru Dionisio Pena, Costa Rica El Indio and Nestor's Bourbon Aji Thermal Shock. Timberline is the house espresso. Peru La Vicuna decaf; method not stated on the listing. Offerings change with the seasons, so this is what their own pages listed on 2026-09-27.
Where to drink it
The Main Street cafe in Westcliffe is open to the public, and the roastery says guests who drop by often catch a roast or a cupping in progress. A second cafe operates in Richardson, Texas.
