Queen City Collective Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Denver, founded in 2016. Here is what their own pages and public sources say about them, in our words.
Their story
Queen City Collective Coffee was started by three brothers, Scott, Luke and Eric Byington, who see coffee as one continuous chain linking farmers to drinkers. The idea took shape in early 2016, after Luke came back from Nicaragua's coffee country and Scott and Eric returned from East Africa. The brothers filed the company papers in August 2016. They began with a 1 kilo roaster and a few bags of green coffee in Scott's garage, then moved roasting into a converted storage closet at Bellwether, a coffee and whiskey bar on East Colfax.
The first cafe opened in 2018 at 1st and Cherokee in the Baker neighborhood, along with the first two hires. A second shop followed in 2019, a few months before the pandemic. By its tenth year the company ran seven cafes and a wholesale program. Its two downtown cafes on Larimer and Wynkoop sit in office building lobbies, and the building owners paid for the roughly 1,000 square foot buildouts.
Queen City buys through direct relationships with producers, visits farms during harvest, and has used farm-level traceability tools and a blockchain project to share profits with producers. The name nods to Denver's old nickname, the Queen City of the Plains.

Roast levels run dark (Bottle Rocket) and natural process single origins. House blends include Belafonte (double origin), Bottle Rocket (dark roast), Day Drinker (half caff) and Twelve Ski Film x Queen City. Single origins on the list when we checked: Honduras Claudia Hernandez and Juan Benitez, Colombia Sonia Bolanos, Ethiopia Banko Gotiti Natural, Rwanda Muhari Natural and Costa Rica Sombre del Cerro Chirripo. Why buying from Queen City Collective Coffee matters here
The company's first roasting space was a closet at Bellwether on East Colfax, and its first cafe opened in the Baker neighborhood in 2018. Cafes run in Five Points, Baker, LoDo, next to McGregor Square on Wynkoop, Berkeley, Wheat Ridge's Gold's Marketplace and Aurora. Queen City works with local artists and musicians, including Colorado songwriter Gregory Alan Isakov, and hosts community events it calls Cowpoke Friday.
