Pablo's Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Denver, founded in 1995. Here is what their own pages and public sources say about them, in our words.
Their story
Pablo's Coffee started in Denver in 1995. Founder Craig Conner left a corporate job, sold his house and ran up his credit cards to open it. The company describes itself as one of Denver's oldest coffee roasters and aims to roast coffee that is excellent but affordable for everyone. Its cafe at 6th Avenue and Washington Street opened in 2001 and became a neighborhood gathering spot. A Capitol Hill cafe followed in 2012 inside the old Penn Garage, a building that serviced cars for more than 70 years before becoming lofts and shops.
Its newer headquarters at Colfax and Syracuse covers more than 6,000 square feet and holds a cafe, offices, a cupping lab and the roastery, where it roasts on San Franciscan 25 and 75 roasters. Pablo's says it routinely pays 50 to 100 percent more per pound for green coffee than the average Fair Trade rate. Many of its coffees carry Rainforest Alliance, Smithsonian Bird Friendly or similar certifications, and others come from cooperatives or single family farms that its importers visit in person. Instead of traditional advertising, the company puts more than 90 percent of its marketing budget into donations, and it has sponsored hundreds of community events over three decades, from music festivals to homeless shelters and medical research.
What they roast
Roast levels run medium and dark. House blends include Danger Monkey (long-standing signature blend), Double Danger Monkey (subscription only), Little Jem (espresso and cold brew), The Leisurist, Two Stroke Smoke (dark roast) and Slow Roller Half-Caff. Single origins on the list when we checked: Honduras Ana Suyapa Munoz, Tanzania AA Mbilidino, Bolivia Finca Rosita Catuai, Mexico Altura Veracruz Natural, Kenya Kiambu Ndumberri AA and Single Origin Roaster's Choice. Little Jem blend is built for espresso and cold brew. Decaf Colombia, water process, organically grown. Offerings change with the seasons, so this is what their own pages listed on 2026-09-27.

The East Colfax headquarters has a cafe in front of the roastery, open daily 7am to 2pm; two more Pablo's cafes are open in central Denver.
