Corvus Coffee Roasters is one of the beloved local roasters we follow in Colorado: an independent roaster based in Denver, founded in 2010. Here is what their own pages and public sources say about them, in our words.
Their story
Phil Goodlaxson started Corvus Coffee Roasters in Denver in 2010 and still owns it. Before opening Corvus, Goodlaxson worked in management for a coffee company in Denver starting in 2008, where he picked up his roasting knowledge. The company began roasting a few hundred pounds of coffee a week and grew to roasting thousands of pounds a week on a Giesen roaster built in the Netherlands.
Corvus buys coffee from Central America, South America, East Africa (including Kenya and Rwanda) and Hawaii, and prints the story of the farm on its single origin bags. Its cold brew has been made with coffee from women-owned cooperatives in Rwanda, and the team has experimented with cold brew aged in whiskey barrels and brewed with hops. Corvus says it buys directly from farmers, and that for nearly all of its core coffees those relationships go back more than ten years.
The roaster works with some of its farmers on experimental fermentations and unusual coffee varieties, alongside its core single origins and house blends. The company frames its mission around sustainability and quality, with the aim of making the world better through coffee and the people who grow it. From a single shop on South Broadway, Corvus has grown to cafes in Uptown, RiNo, the Denver Tech Center, Arvada and Littleton, with a Fox and Raven bakery flagship in Englewood listed as not yet open.

House blends include Dead Reckoning, Halcyon Days, Equalizer, Orchard Thief (seasonal) and Westerlies Winds. Single origins on the list when we checked: Wasa Sidama, Wasa Honey, El Pijao Divisa and Savage Finca Deborah. 40 Winks Decaf blend; decaf method not stated on the listing.
