Castle Rock

  • Apis Coffee roasts light and medium on a Mill City MCR-1 and logs every batch with RoastPATH software. The house coffee is the Bee Bread Blend. Manos de Mujeres, from Narino in Colombia, comes through a program for women producers.
  • Bearded Man Coffee names most of its coffees after beard styles, such as Chinstrap, Balbo and Yeard, and calls its decaf Babyface. A separate infused line includes Yeti, with cocoa and cayenne.

Parker

Convict Coffee Company is family-owned and puts part of its sales toward programs for people leaving prison. Mercy Rule, its light espresso, mixes washed Colombian beans with natural processed coffees from Africa and Peru. It has cafes in Parker and Denver.

Highlands Ranch

Lost Coffee roasts at its Springer Drive cafe and sells beans to local businesses, Whole Foods and neighborhood grocers. Cosmic Dog Coffee Roasters air roasts micro batches once an order is in, from a light Ethiopia Harrar to the dark Astro Fuel espresso blend.

Castle Rock's coffee story

Lost Coffee has the longest record of the five. It started as a food truck in 2010 and had a permanent shop within about a year. It now runs six cafes, Castle Rock's included.

Apis grew out of a trip. Owner Fabian Ferrada dates it to 2017, after a visit to Melbourne, Australia, with a friend who works as a coffee consultant and barista. The family could not find fresh light and medium roasts near home, so they taught themselves to roast. Apis compares its slow growth to honey bees building a comb. There is no cafe yet; the long-term plan is a commercial space that also pours espresso.

Cosmic Dog opened in Highlands Ranch in June 2021, and its founders say the town's 5,817 feet helped inspire the brand. Convict followed in Parker in 2024. Founder Dan Klehm spent years in and out of prison before a long restaurant career, and the company's bylaws cap pay gaps at five to one.
