Convict Coffee Company is one of the beloved local roasters we follow in Colorado: an independent roaster based in Parker, founded in 2024. Here is what their own pages and public sources say about them, in our words.
Their story
Founder Dan Klehm spent years in and out of prison before a long restaurant career. He started the family-owned company in Parker in 2024. The mission centers on cutting reoffending: part of sales supports programs for people leaving prison, and company bylaws cap pay gaps at five to one. The company lists three family members as founders: Dan Klehm as CEO, his son Damien on operations and Daniel Klehm on marketing.
Before starting it, Dan Klehm worked his way up in restaurants to vice president and chief operating officer roles with several national and regional brands. As of August 2026 the company reported that its customers had helped raise more than $200,000 toward reducing recidivism, and its mission includes franchise chances for rehabilitated offenders. Mercy Rule is its light espresso, a mix of washed Colombian beans with natural processed coffees from Africa and Peru. Bean orders are roasted and shipped once a week.

Roast levels run light, medium and dark. House blends include The Catalyst and Mercy Rule. Single origins on the list when we checked: Nicaragua, Guatemala and Ethiopia.
