Apis Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Castle Rock, founded in 2017. Here is what their own pages and public sources say about them, in our words.
Their story
Owner Fabian Ferrada dates Apis Coffee to 2017. A trip to Melbourne, Australia, guided by a friend who works as a coffee consultant and barista, sparked the idea. Back in Castle Rock the family could not find fresh light and medium roasts nearby, so they taught themselves to roast. Roasting is done on a Mill City MCR-1, which handles one kilogram per batch, with RoastPATH software to track each roast.
The company's stated goal is to teach customers how lighter roasts bring out a coffee's origin. It likens its slow growth to honey bees building a comb, and its house coffee is the Bee Bread Blend. Prices follow the green coffee market, and the owner says savings will be passed on when green prices fall.

Roast levels run light and medium. House blends include Bee Bread Blend. Single origins on the list when we checked: Tanzania Peaberry Southern Blend, Peru Regional Select Cajamarca and Colombia Manos de Mujeres. Offerings change with the seasons, so this is what their own pages listed on 2026-09-28.

Coffee is roasted at the owner's home in Castle Rock for now. The long-term plan is a commercial space that also serves espresso drinks. One current coffee, Manos de Mujeres from Narino, Colombia, comes from a program for women producers run through a 300-member growers association.
