Their story
Two partners, one from education and one from the auto industry, launched the business in Highlands Ranch in June 2021. Coffee is air roasted in micro batches and only after an order comes in, with about three days allowed before shipping or local pickup. The About page is signed by Lezlee and David, the two partners behind the roastery, who describe themselves as lifelong learners.
The owners tie the Cosmic Dog name to curiosity, exploration and small everyday pleasures, and they hand select green beans from farms in several countries. The current list runs from light Ethiopia Harrar and Kenya Kirinyaga to a medium Mexico Chiapas and Costa Rica Tarrazu, a dark Colombia Sierra Nevada and the dark Astro Fuel espresso blend.

Roast levels run light, medium and dark. House blends include Astro Fuel Espresso Blend.
