Tributary Coffee Roasters is one of the beloved local roasters we follow in Colorado: an independent roaster based in Gunnison. Here is what their own pages and public sources say about them, in our words.
Their story
Owner Travis Colbert moved to Colorado in 2005 and ran production at a Minturn roaster, then became a partner in a roaster and cafe in Leadville before settling in Gunnison. His interest in coffee began in the southern Philippines, drinking beans from wild village trees that had been roasted in a pan over an open fire. Its coffee suppliers include Spirit Mountain Coffee, an organic farm and nature preserve in the Dominican Republic run by Chad and Krista Wallace, part-time Gunnison residents.
The cafe says it expects to add more direct trade coffees as the business grows. Food is made from scratch in the kitchen, from breakfast burritos and biscuit sandwiches to a gluten free quiche with a shredded potato crust.

Why buying from Tributary Coffee Roasters matters here
The name refers to a stream feeding a larger river, a nod to Gunnison sitting in the headwaters of the Colorado River. The logo bird is the American Dipper. Many ingredients come from local and regional producers, including milk from Rocking W Cheese and eggs from Dayspring Farm in Olathe and sourdough from Mountain Oven in Paonia. Beans can be shipped anywhere in the US at a flat rate or picked up free at the Main Street shop.
Every bag bought from a Gunnison roaster pays roasting and cafe wages in Colorado, and the coffee reaches you days after roasting instead of months. That is the reason the club exists. Why local roasters matter.
