Palisade Coffee Company is one of the beloved local roasters we follow in Colorado: an independent roaster based in Clifton. Here is what their own pages and public sources say about them, in our words.
Their story
Elisha Espinoza became owner in 2021 and has roasted every batch since. Before that she sought out coffee from Colorado mountain towns to cafes on the slopes of Kilimanjaro. All roasting happens at the company's base in the Business Incubator Center in Orchard Mesa, on two electric machines: a Stronghold S8X and an Aillio Bullet R2 Pro. Whole bean orders are roasted Monday through Wednesday. Ground coffee is left to rest for at least a day before grinding.
The company does not hold USDA organic certification and says its sourcing partner trains farmers in quality growing methods. Its first co-fermented coffee, a Finca Monteblanco lot from Colombia, was processed with a culture that included passionfruit, pineapple and molasses.

House blends include Cornerstone, Main Street Dark and Main Street Medium. Espresso: Legacy (traditional) and Horizon (light-medium). Offerings change with the seasons, so this is what their own pages listed on 2026-09-28.

The coffee bar runs a drive-thru and counter every day from 6:30 am to 2 pm.
