Building Three Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Colorado Springs. Here is what their own pages and public sources say about them, in our words.
Their story
The owners spent more than 12 years in the US Army. In the summer of 2014 they decided against a military career and put their long-held interest in coffee to work instead. They had settled on Colorado Springs as home back in 2007, when the Army stationed them at Fort Carson. A year of research and advice from other roasters came before the first sales. The company says it roasts in small batches and buys through direct trade with importers and farmers.
Some green coffee comes through Onyx Coffee. One example is El Diamante, grown by Patricia Perez, a single mother in Huehuetenango whom Onyx helped through a leaf rust outbreak. The roaster says it was voted best roaster in Colorado Springs in 2017.
What they roast
House blends include The Daily and Darkish Edition. Single origins on the list when we checked: Korofeigu, Sonora, Ethiopia Wush Wush, La Basa and Finca Palmichal. Decaf: Colombia Decaf. Offerings change with the seasons, so this is what their own pages listed on 2026-09-28.

Its coffee bar and roastery are in the Lincoln Center on North Cascade Avenue. A coffee club there hands out bags on the second and fourth weekends of each month, along with a free drip coffee. Local cafes, churches and businesses pour its coffee, among them Old World Bagel Co., Kiaros Coffee House, Toastique, Java House and the ENT Credit Union headquarters.
