Jubilee Roasting Co. is one of the beloved local roasters we follow in Colorado: an independent roaster based in Aurora. Here is what their own pages and public sources say about them, in our words.
Their story
In 2015 the founder was finishing his last college semester in Boulder while living out of a van. His plan to bike to San Diego changed when his father found an inexpensive warehouse in Aurora. That warehouse, which the founder says police used for sting operations in the 1970s, was turned into the Jubilee roastery and coffee shop. The shop set out to roast coffee its team enjoyed and to give North Aurora a stronger sense of community. Its internal motto is "create well and be good neighbors."
Over the years the Aurora space has been renovated twice, a small second shop opened downtown, and the company moved up to a larger roaster. Jubilee says it now buys from several of the same farms each year, and it treats those repeat relationships as the core of its sourcing.
What they roast
House blends include Moonbuggy Blend. Single origins on the list when we checked: Burundi Remera Natural, Peru Marcopampa, Mexico Patlanalan, Papua New Guinea Kunjin and Rwanda Kanzu. The Kenton Street shop in Aurora is open Monday to Saturday, 7 am to 3 pm, and closed Sundays.

Wholesale cafes nearby get their beans in reusable two gallon buckets instead of five pound bags, a change the roaster says cut its wholesale packaging waste by about 70 percent. Its retail bags have been fully compostable since 2023, and customers who cannot compost at home can return empty bags to the cafe for commercial composting.
