Incognita Coffee Roasters is one of the beloved local roasters we follow in Colorado: an independent roaster based in Golden. Here is what their own pages and public sources say about them, in our words.
Their story
Erin and Justin named the business after Terra Incognita, the travel blog they kept while backpacking across Asia and living in a camper van in Europe. After eight years of roasting at home, the couple upgraded to a Bullet R1 roaster and began selling coffee. Justin works in emergency medicine, and Erin is a librarian who studies food culture; her grandfather tended coffee roasters in Nicaragua.
The couple say they like to explore less familiar origins, and recent lots have included a washed coffee from Kouoptamo in Cameroon and a peaberry from the Pearl Mountain Estate in India. The Night Shift house blend pairs Colombia with Kenya, and the Swing Shift half caf mixes a sugarcane decaf from Colombia with a washed Tanzania. Coffee is roasted on set roast dates, with a small stock of ready to ship bags kept on hand between them.
Erin has also worked as a wine and craft beer educator, and Justin has lived in China and Australia.
What they roast
House blends include Night Shift Blend, Camp Blend, Rotor Wash and Dark Humor. Single origins on the list when we checked: Cameroon Kouoptamo, Papua New Guinea Simbai, India Peaberry, Tanzania Kilimanjaro Organic, Zambia Kasama, Yunnan Honey Process and Burundi Kayanza.
