Cimarron Coffee Roasters is one of the beloved local roasters we follow in Colorado: an independent roaster based in Montrose. Here is what their own pages and public sources say about them, in our words.
Their story
The Montrose micro-roaster aims for roasts that keep each origin's character while staying easy to drink. It also runs a coffee and book shop in Ridgway. Chimney Rock, the darker blend, pairs washed Guatemala with natural Brazil and is taken far enough to caramelize the sugars without tasting overroasted, per the roaster. Courthouse, the house espresso, uses the same two origins with a bit more roast development; the shops pull it as a 19 gram dose yielding about 36 grams.
Shut-Eye is a decaf that rotates by season and stays on bar for espresso drinks, and Roaster's Choice lets staff pick a current single origin for the buyer. Recent single origins include a dry processed Guji and a washed Yirgacheffe from Ethiopia, plus a washed Peru from Cajamarca.

Roast levels run light and dark. House blends include Chimney Rock and Courthouse. Single origins on the list when we checked: Ethiopia Banko Gotiti, Ethiopia Dry Process Dogo Sodu and Peru Namballe.
