Bivouac Coffee Co. is one of the beloved local roasters we follow in Colorado: an independent roaster based in Evergreen, founded in 2017. Here is what their own pages and public sources say about them, in our words.
Their story
Founded in 2017, the company roasts only natural process, sun dried coffees, which it says saves the water used to wash coffee at origin. Bivouac is organized as a public benefit corporation and belongs to 1% for the Planet. The company describes itself as the first US coffee business to roast natural process coffees exclusively, and its story page says washing coffee uses about 7.9 liters of groundwater per 12 ounce cup.
Its FAQ notes that the roastery is not USDA certified organic, so it cannot label organic lots as such, and says it pays well above Fair Trade rates. One current single origin comes from Cerro San Luis, a family micromill in Grecia, Costa Rica, owned by the Delgado siblings, Alexander and Magali, together with their spouses. A Campfire Blend was made with former Navy SEAL commander and author Rorke Denver, and the brand has teamed up with Backcountry Discovery Routes to back the adventure riding community.

Roast levels run light, medium and dark. House blends include The Wild Thing, Rally Blend, Sun Seeker and The Crux. Single origins on the list when we checked: Costa Rica Cerro San Luis and Ethiopia Guji Buku Sayasa. Espresso: Second Wind. The Evergreen tasting room connects to 14 miles of trails used for running, hiking and mountain biking. Two percent of revenue goes to each of its outdoor recreation and environmental nonprofit partners. The tasting room runs a coffee tasting session on Saturday mornings and a latte art class on Thursday afternoons. Visitors to the tasting room will find a 1974 CZ Enduro 250 dirt bike on display, a recent addition the company wrote about on its blog.
