Lima Coffee Roasters is one of the beloved local roasters we follow in Colorado: an independent roaster based in Fort Collins, founded in 2018. Here is what their own pages and public sources say about them, in our words.
Their story
Diego and Amanda Lima started the family roastery in 2018, bringing more than 13 years of combined work in coffee. The pair say they choose importers who invest in the environment and in farming communities, and they pick Fair Trade and organic lots when they can. The team teaches public coffee classes in town and runs a mobile espresso bar for weddings and events.
Before starting their own company, Diego roasted for Cafe Richesse in Fort Collins while Amanda worked there as marketing manager, Daily Coffee News reported; Diego came to the US from Rio de Janeiro at 16. The first Lima bar opened in July 2020 in the Foothills shopping center, a 250 square foot space the owners designed, with coffee roasted on two Mill City roasters in an off-site roastery. Amanda told Shoutout Colorado that opening in the middle of the pandemic was a big risk, and that strong local support pushed them toward a second shop.
The company says a washed Geisha grown by Wilder Garcia in Cajamarca, Peru, won gold in the filter category at the 2026 Global Coffee Awards for the US and Canada.

Roast levels run Dark Roast. House blends include 11:11 Blend, Isabel Blend and Take It Easy Blend (Half Caff). Single origins on the list when we checked: Wilder Garcia Geisha, Don Alvaro Blandon, Nicaragua, Embu Kenya, Mexico Chiapas, Ethiopia Guji Organic, Guatemala Huehuetenango and Brazil Cerrado.
