Whiskey Barrel Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Commerce City. Here is what their own pages and public sources say about them, in our words.
Their story
The founders set out to combine their interest in coffee and bourbon. The green beans are aged in whiskey barrels, then hand roasted in small batches on a vintage roaster in Colorado. About two years of testing went into the product, because the whiskey flavor swamped most of the green coffees they tried. They settled on a Vittoria Estate coffee drawn from the top 2 percent of a farm's crop, and they say the farmer agreed to sell it only after repeated requests.
Only barrels that previously held bourbon are used, since bourbon must age in freshly charred white oak. The European roaster is run by hand with no computer controls or saved roast profiles, so the roasters learned the process through repeated trial roasts. The fully barrel-aged coffee is hand-filled into bottles, labeled with batch and bottle numbers, and sealed in wax.

Roast levels run Light, Medium and Dark. House blends include Devil's Cut, Angel's Share, Moonshine, Barrel Aged Mocha Java, Mocha Java, Espressomatica, Italian Roast, Blacksmith, Old School and Embers. A decaf is on the list. A limited Molly Brown Mocha Java was aged in a freshly emptied barrel from Molly Brown Spirits, a Denver distillery. Its Angel's Share blend began by accident, when some barrel-aged coffee left in the grinder mixed into a batch of the regular classic line.
