Model Citizen Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Woodland Park, founded in 2020. Here is what their own pages and public sources say about them, in our words.
Their story
The veteran-owned family business started in 2020, with a newly retired Army colonel from the Camacho family doing the roasting. Beyond retail bags, it sells wholesale, makes private label coffee and runs hands-on roasting and tasting sessions. The Camacho family's taste in coffee was shaped by years living in Hawaii, Europe and Japan, and the family lists travel to Brazil, Cambodia, Uganda and Iceland among other places.
Its single origin list is broad, running from Peru Cajamarca, Tanzania Peaberry and India Malabar to Uganda, Papua New Guinea and an anaerobic Nicaragua from La Bastilla. A 2024 post on its blog explains why the roaster chooses not to sell civet coffee, pointing to its taste and price among other reasons. Cafes, restaurants and taprooms buy the coffee wholesale, and prospective accounts are offered a tasting first.

Why buying from Model Citizen Coffee matters here
Beans are sold whole, but the Woodland Park roastery will grind an order at no charge if the buyer notes how they brew. Alongside the regular roasts it sells a reserve line branded Luxe719 and a bourbon barrel coffee called Jacob's Bourbon Barrel Bounce Back.
