Loyal Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Colorado Springs, founded in 2017. Here is what their own pages and public sources say about them, in our words.
Their story
Loyal Coffee grew out of a group of six Colorado Springs baristas who started meeting in 2015 as a kind of think tank about their careers and the coffee trade. Hospitality and community became the core ideas, and the group decided to build in Colorado Springs instead of moving to a bigger coffee city. The first cafe opened in October 2017 on South Nevada Avenue in downtown Colorado Springs, with its own roasting program from the start.
The six barista co-owners split the work by strength: Eric Nicol as CEO, Abigail Baum as general manager, Christopher Mueller on operations, Bevan Cammell as head roaster, Seth Fuller on education and Tyler Hill on guest experience. A second cafe opened later at Northgate on the north side of the city, and roasting moved to a facility in Ivywild on the south side of downtown, which also supplies wholesale customers. Loyal describes itself as barista built and says it roasts and brews coffee it loves for people it loves in the city it loves.
The company aims for relationships with producers that are both quality focused and economically good for the farmers, and picks coffees meant to be exciting yet approachable.

House blends include House Blend, The Double Zero Blend and Ember. Single origins on the list when we checked: Kenya Malaki Estate, Mexico San Agustin Loxicha, Mexico San Antonio Honey, Colombia Finca La Marulanda, Colombia El Meridiano and India Ratnagiri Hydro. Two Loyal cafes, downtown and Northgate, are open daily 6am to 7pm; the roastery is not advertised as open to visitors.
