Giovannitti Coffee Roasters is one of the beloved local roasters we follow in Colorado: an independent roaster based in Louisville. Here is what their own pages and public sources say about them, in our words.
Their story
The Louisville roaster buys from co-ops it describes as socially responsible and roasts in small batches, shipping within 48 hours of roasting. The Guatemala is bought through ASOBAGRI, a Huehuetenango cooperative of more than 1,400 members in 80 communities who farm small plots and process at their own micro mills. Its Colombian coffee comes from AMUCC, an association of 274 women growers in Cauca who each head their household, working with the exporter Expocafe.
The Sumatra comes from the Sara Ate Cooperative in Bener Meriah, Aceh, a group formed in 2011 with about 517 small growers who use the wet hulled method. All three decafs, an Ethiopia Sidamo, a Sumatra and an espresso, are made with the Royal Select water process, which draws caffeine out with a solution of coffee solubles.

Roast levels run French roast and dark. Single origins on the list when we checked: FTO Guatemala Huehuetenango, FTO Colombia Cauca AMUCC Women's Co-Op, FTO Congo Umoja, FTO Ethiopia Yirgacheffe, Organic Ethiopia Sidamo and Organic Sumatra Mandheling.
