Their story
Gabee is run by three people: Ho Young roasts, Hyo Jung is a Q grader and Yuri works as the barista. They describe it as a small specialty coffee lab. The team first ran a roastery cafe in Korea, then worked in coffee in Singapore and Australia before settling in Boulder, where they roast in small batches. Gabee says the Coffee Quality Institute has awarded it a Q Processing Generalist credential, which focuses on how processing changes a coffee's chemistry and flavor.
Its instructor Hyojung Kim served on the international jury for the 2026 Costa Rica Cup of Excellence, according to a class listing on its shop. The menu leans on rare lots such as Panama Geisha, Jamaica Blue Mountain and Yemen coffees. The company bought the winning El Salvador Cup of Excellence 2024 lot at auction.
