Servant Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Denver, founded in 2019. Here is what their own pages and public sources say about them, in our words.
Their story
John left a 15 year career in the energy business, and he and his wife Sarah traveled Southeast Asia with their kids while deciding what came next. A two week family trip to Colombia before moving into their Denver home gave John a close look at coffee farming and sparked the company. Servant Coffee launched in October 2019 around the idea of serving customers, growers and local charities well.
Sarah was growing her travel company, Purposeful Wanderings, and the Colombia visit doubled as research for it while John studied coffee. Roasting happens on Mondays and Tuesdays, with most orders shipped on Tuesday, and each bag is flushed with nitrogen to hold freshness for about three months. Coffee ships as whole beans; the FAQ says grinding is done only when a customer asks for it in the order notes.
In July 2023 the team traveled to Chiapas, Mexico, to visit Mayan Harvest, a producer group led by Rosalba Cifuentes Tovia that had supplied them for three seasons.

House blends include Tribute, Flourish, Prosper and Motivate. Single origins on the list when we checked: Juice Box (Ethiopia), Quiet Sunrise (Honduras) and Citrus Grove (Ethiopia). Decaf: Decaf Colombia. Offerings change with the seasons, so this is what their own pages listed on 2026-09-28.
