Blue Sparrow Coffee is one of the beloved local roasters we follow in Colorado: an independent roaster based in Denver, founded in 2017. Here is what their own pages and public sources say about them, in our words.
Their story
Blue Sparrow opened its first cafe on Blake Street in Denver in 2017, in a space of under 500 square feet in the city's art district. A Platte Street cafe followed in January 2020, then a Sherman Street cafe at The Sudler in July 2024. The cafes take their look from the warm, classic design of European bistros and are meant as places for neighbors to meet.
The company began roasting its own coffee a few years before 2026 and chose to build its lineup around blends rather than single origins, a craft it considers underrated. A downtown cafe at 1200 17th Street was set to open on August 30, 2026, with a 17th St. blend named for the street. Sustainability has been part of the business from the start. It runs yearly waste audits, keeps compost stations for customers at two cafes, swapped sugar packets for refillable syrups in 2022, installed a heat pump at Blake Street in 2024 and gets about three quarters of that site's metered power from solar.
Staff are paid for quarterly sustainability training, and day-old pastries are refilled and sold again instead of thrown out. Its parent company, Mainspring, earned B Corp certification in 2023.
What they roast
House blends include Headliner Espresso and 17th St. blend. Single origins on the list when we checked: Rotating filter coffee (changes regularly). Headliner Espresso is the house espresso used across the milk drinks. Offerings change with the seasons, so this is what their own pages listed on 2026-09-27.
Where to drink it
Blue Sparrow's Denver cafes are open daily from early morning to late afternoon; no separate roastery visits are advertised.

Blue Sparrow started in Denver's RiNo art district on Blake Street and has since opened on Platte Street, Sherman Street and 17th Street downtown. It worked with Denver Public Schools on 4,000 cup sleeves decorated by students. In 2024 it gave more than $500 to Zero Foodprint to fund regenerative farming.
